Pumpkinsoup
With this delicious recipe you will have the tastiest pumpkin soup on the table in no time!
Ingredients:
- 1 medium pumpkin , peeled, seeded and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, peeled and sliced
- 1 potato, peeled and cut into cubes
- 1 liter vegetable stock
- 2 tablespoons of olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley or chives for garnish
- Cream or coconut milk (optional)
Instructions:
- Heat the olive oil in a large stockpot over medium heat. Add the onion, garlic and carrot and cook until soft and lightly browned, about 5 minutes.
- Add the pumpkin cubes and potato cubes to the pan and fry for another 5 minutes, stirring occasionally.
- Add the ground cumin and coriander to the vegetables and fry for another 1-2 minutes to warm the spices and release their flavors.
- Pour the vegetable stock into the pan and bring to the boil. Reduce heat to low, cover pan and simmer until vegetables have softened, about 20-25 minutes.
- Remove the pan from the heat and use a hand blender or blender to puree the soup until smooth. If you are using a blender, let the soup cool slightly before pureeing it in batches.
- Return the pumpkin soup to the pan and heat it over low heat. Add salt and pepper to taste. If you want to make the soup a bit creamier, you can add some cream or coconut milk to taste.
- Serve the pumpkin soup warm, garnished with fresh parsley or chives. You can also add some croutons or roasted pumpkin seeds on top for extra texture.
